INGREDIENTS
1 large head of cauliflower, chopped bite size
2 tbsp cold pressed coconut oil or grass-fed butter, melted
½ tsp unrefined salt
1 clove garlic, minced
2 tbsp, fresh parsley, finely chopped
Juice of 1 lemon
DIRECTIONS
Preheat oven to 400⁰F.
Combine cauliflower, oil, salt and garlic into a large bowl and toss well. Spread on a large baking sheet and bake for 40 – 45 min. Stir a few times while cooking to evenly roast. Remove from oven and drizzle with lemon juice and sprinkle with parsley.
NOURISHING TIP
Cauliflower is included in an amazing group of vegetables called cruciferous which are very high in liver supporting sulfur compounds. This aids the liver in neutralizing toxins within the body. As an extra bonus: a cup of cauliflower has almost as much Vitamin C as an orange!
