INGREDIENTS

2.5 cups of raw or sprouted nuts/seeds

1/2 cup unsweetened shredded coconut

1/2 cup dried unsweetened cherries or raisins, chopped

2 tbsp chia seeds

1/4 tsp unrefined salt

1 tbsp cold-pressed coconut oil

1/3 - 1/2 cup raw honey (depending on how sweet you like them)

1/4 cup nut butter (I like hazelnut almond)

2 tsp vanilla
DIRECTIONS

Preheat oven to 300 F and line a baking sheet with parchment paper.

If using raw nuts/seeds lay them out on the baking sheet and roast for 10 minutes. Allow them to cool, then chop. If using sprouted you can skip the roasting step and go straight to chopping.

Combine chopped nuts/seeds, coconut, dried berries, chia seeds and salt into a medium bowl. Mix well.

In a small pot combine coconut oil, honey, nut butter and vanilla. Heat on low and whisk until all is melted and smooth.

Add every drop of melted goop to dry ingredients and mix well. Spread out as thinly as possible on lined baking sheet.

Bake for 10 minutes, rotate the pan, then bake for an additional 10 minutes or until ‘granola’ is golden brown.

Allow to cool completely then break apart into clusters. Then try not to eat the entire thing in a single sitting.

Will keep in an airtight container in the fridge for 3 – 4 weeks, but doubtful they will last that long!

For an inflamed belly grains can often feel like sandpaper which goes against everything we are taught about 'healthy eating'.
This 'granola' recipe is grain free, sugar free, gluten free so gentle on the tummy. If nuts/seeds also seem to irritate your tummy try going the extra gut-healing step by using sprouted which makes them much easier to digest.
