INGREDIENTS

4 to 6 servings

  • 1 Tbsp grassfed butter or cold pressed coconut oil

  • 1/2 cup finely chopped onions

  • Large minced garlic clove

  • 4 cups organic chicken bone broth 

  • 2 large ripe avocados (peeled and mashed)

  • 2 tsp lime juice

  • 2 cups coconut milk

  • 1/4 Tsp ground cumin

  • Salt and Pepper

  • 1/4 cup chopped cilantro

DIRECTIONS

  1. Heat the butter (or oil) over medium heat and add in the onion and garlic. Sauté for approximately three minutes.

  2. Add the broth, lime juice and avocados and turn up the heat until it ALMOST boils. Then reduce the heat to low and simmer for 7-10 minutes.

  3. Add the works to a blender and puree until smooth. Return it to the pot and add the coconut milk, cumin, salt and pepper.

  4. Cook over medium heat for 5 minutes. Add fresh cilantro and serve warm. (Alternatively, let it cool and serve it cold. Tastes totally different and just as delish).

NOURISHING TIP

Traditionally made bone broth is an essential part of all my digestive healing protocols. It contains glycine which enhances our digestive secretions (allows us to digest our food more easily), is full of glutamine which is the primary fuel for our intestinal cells (they can’t work, heal or thrive without fuel!) and it’s gentle and easy to digest which is essential for those with chronic tummy trouble. A soup made with bone broth gives the digestive tract a break allowing it the time and space to heal. 

You can make your own bone broth or buy a good quality traditionally made one like Wild Moon Organic Bone Broth (one of my personal favorites!)
